We know about carrot cake .. and even courgette cake .. but have you ever had a beetroot cake?!
'Ken the Veg' popped his head into the office last week while Neil (catering manager) and i were having a pow wow. he wondered if we had ever heard of the Cake Root Company.
I had because my sister in law Sue Moffitt (Fifiefofum Art Gallery near Newton) had used them when they opened as a cafe. They are really tasty, so moist and they keep really well.
Anyway .. Ken has oodles of beetroot at the minute so Neil and Gill (our amazing baker) surfed the net and gave beetroot brownie a whirl .. i have to say .. the brownie i tasted today was different. it is still really chocolatey (with a dark pink tinge!) but the texture is almost unctuous - without being sloppy .. it holds together really well. the dark chocolate bitterness is perfectly tempered by the beetroot's sweetness and it adds an altogether richer dimension to the brownie while not being sickly.
i am not a sweet person and as you can see i was blown away. my two year old got the end of it and she wanted 'more!' a crafty way of getting them to eat their veg.
we are exploring putting cakes onto ken the veg's delivery round, using his vegetables as inspiration and also putting our award winners on there such as the original brownie and the gingerbread.
it might take us a while to get going (recipe testing etc) but we are cracking on .. watch this space! :0)
